RECIPE: Green Salad with Parma Ham Paired with Fleur du Cap Sauvignon Blanc

Spring is the perfect time for lovely, light dishes that are fresh and full of flavour! For your next food and wine pairing, we recommend this beautiful green salad with Parma ham and a glass of our crisp Essence Sauvignon Blanc.



*Serves 4



For the dressing:

¼ cup (60 ml) passion fruit pulp

¼ cup (60 ml) olive oil

1 tbsp (15 ml) white wine vinegar

1 tbsp (15 ml) honey

Salt and pepper, to season


For the salad:

150 g fine asparagus

150 g extra fine beans

200 g baby spinach, rocket, watercress mixture

2 courgettes, julienned

1 Mediterranean cucumber, chopped

3 passion fruit, quartered

A handful of gooseberries

200 g Parma ham

50 g store-bought caramelised seeds



  1. For the dressing, place all of the ingredients in a bowl and whisk until combined. Season to taste.
  2. Bring a large pot of salted water to the boil. Blanche the asparagus and fine beans, separately, until just cooked. Refresh in ice water. Drain and set aside until needed.
  3. Arrange the salad leaves, courgettes, asparagus, beans, cucumber, passion fruit and gooseberries on a plate.
  4. Finish with the Parma ham and caramelised seeds. Serve with the dressing on the side. Enjoy with a glass of our Essence Sauvignon Blanc.
